Vegetable peeler which can be secured to a tabletop for one handed use.
Most of these products stabilise food using spikes on a slip resistant board so that a hand held peeler can be used.
Alternatively, a peeler clamped to a worktop means the peelings can fall into a bowl behind the peeler which may make it easier for someone with the use of only one hand or someone with tremor. However you will still need to be able to grip the food and after each stroke reposition it to continue peeling.1 2
